Rice Pudding!

Dear followers,

On tues we were cooking our first dish from our chosen country. Since Elaine and I are doing India we decided to do their traditional Rice Pudding! It's like our rice pudding but Indian people put cardamon, cinnamon, brown sugar and sultanas in their recipe.

We got caught for time because our sugar turned to toffee on us but we fix it and got it finished eventually. It tasted really good, our teacher said it tasted like Christmas which is nice.

The recipe is:
Ingredients:1.1 litres/2 pints whole milk
2 tbsp long-grain rice, such as basmati
4 whole green cardamom pods, lightly crushed
2 tbsp brown sugar
5cm cinnamon stick
1 tbsp flaked almonds
Method:
1. Put have the milk, the rice and cinnamon into a medium saucepan and bring to the boil. Stir continuously to avoid the rice from sticking. Once to the boil, turn down heat and simmer till rice is cooked, stirring frequently.
2. Once rice is cooked add the rest the rest of the milk. Cook till it begins to thicken.
3. Add in the rest of the ingredients and continue stirring till ingredients have come together and mixture is thick.
4. Serve hot or cold with a garnish of freshly grated nutmeg.
Rem: The pudding will thicken further when cool.
